For those of you following my quest for make-ahead lunch options (see option 1 and option 2), this is my third attempt...pot pies! Thank you sister-in-law for the recipe and recommendation! Very tasty!! The only problem is...I need a little bit more, but feel bad eating another, because one has 15g of fat. I would also probably add some other veggies. But will definitely make again! Sorry, I deleted the link to the recipe and am don't want to write it out right now. The general idea is a pot pie filling stuffed in store-bought pie crusts (cut into 4ths).
